Château de Béru Chablis Terroirs de Béru Bio 2022 is a strikingly pure expression of cool-climate Chardonnay from one of Chablis’ most characterful estates. Certified organic and crafted from estate-grown fruit, it captures the region’s famous tension between racy acidity and deep, salty minerality. This cuvée showcases the historic Kimmeridgian limestone slopes around the village of Béru, where Chardonnay takes on an especially chiselled, terroir-driven profile.

Tasting Notes
In the glass, the 2022 Terroirs de Béru shines a pale lemon to light straw, with silvery reflections that underline its youthful, cool-climate character. The nose is precise and vibrant: think green apple, lemon zest and white grapefruit, layered with crushed seashells, wet stone, and a hint of smoke and chalky dust. Subtle notes of white flowers and fresh bread dough add complexity without ever feeling heavy. On the palate, this is classic, tension-filled Chablis: dry, medium-bodied, and driven by a firm, mouth-watering acidity. Crisp citrus, green pear and tart apple are wrapped around a core of saline, almost iodine-like minerality, evoking the fossil-rich Kimmeridgian soils. The texture is sleek and linear rather than creamy, with a long, stony finish that leaves a lingering impression of sea spray and flint. Enjoyable now for its energy and precision, it will develop additional complexity and a more pronounced, smoky-mineral depth over the next 3–6 years.

Production
The fruit for Terroirs de Béru Bio is sourced from organically farmed vineyards surrounding the hilltop village of Béru, in the northern reaches of Burgundy’s Chablis appellation. Here, cool temperatures and significant diurnal swings preserve acidity, while classic Kimmeridgian limestone and marl, studded with marine fossils, imprint the wine with its characteristic saline-mineral backbone. Grapes are harvested by hand to ensure careful selection in the vineyard, then gently pressed and allowed to ferment with indigenous yeasts, typically in stainless steel and neutral vessels to protect freshness and terroir detail. Aging on fine lees adds subtle texture and complexity without masking the clarity and precision that define this cuvée.

Food & Serving
This Chablis is a benchmark partner for seafood, especially oysters, shellfish, and simply prepared fish such as sea bass, turbot or sole. It also shines alongside sushi and sashimi, grilled prawns, seafood pasta, chèvre or other fresh goat cheeses, and light dishes with citrus, herbs or beurre blanc. Serve well-chilled but not icy, ideally at 9–11 °C (48–52 °F), to allow the aromatics and minerality to unfold. Decanting is not essential, but a brief 15–20 minutes in a carafe or in the glass helps the wine open and show more of its saline, smoky complexity.

The type of chablis even sommeliers really enjoy drinking. Low intervention but clean and precise. In the vinification very little sulfur is used. The cuvée, made from grapes grown in the top vineyards surrounding the château, perfectly captures the unique character of Beru’s Chablis—a style that still embodies the region’s terroir so well. This is truly exceptional wine that will delight anyone.
