Tasting Notes
In the glass, Château Canon 2018 shows a deep garnet-purple hue, dense at the core with a vibrant, youthful rim. The aromas unfold in generous layers: candied violets, preserved plums, and black cherry compote are lifted by notes of Ceylon tea, kirsch, powdered cinnamon, fine dark chocolate and a subtle, earthy suggestions of fertile clay soil. It is an aromatic profile that manages to be both opulent and beautifully detailed.
On the palate, this is medium to full-bodied, with juicy, concentrated black and dark red fruits at its core—black cherry, plum and blackberry—wrapped in a velvety cloak of soft, polished tannins. The 14% alcohol is seamlessly integrated, balanced by a well-judged freshness that keeps the wine energetic rather than heavy. The texture is plush yet structured, leading into a long, perfumed finish where floral tones, spice, and cocoa linger. While already approachable with some air, this 2018 has excellent aging potential; expect it to evolve gracefully over 15–25 years, gaining complexity and secondary nuances of tobacco, truffle, and dried flowers.

Château Canon’s vineyards lie on the famed limestone plateau and slopes of Saint-Émilion, where thin clay soils over pure limestone provide superb drainage and a natural freshness that is key to the wine’s elegance. The 2018 vintage blend of 72% Merlot and 28% Cabernet Franc benefits from meticulous work in the vines—precise canopy management, green harvesting where necessary, and hand-picking at optimal ripeness, parcel by parcel. In the cellar, fermentation is carried out in temperature-controlled vats to preserve fruit purity and aromatic definition, followed by aging in French oak barrels (a significant proportion new) to refine the tannins and add subtle spicy, toasty complexity without overwhelming the character of the terroir.
Food & Serving
Château Canon 2018 is a superb partner for refined dishes such as roast lamb with herbs, dry-aged ribeye, duck breast with a cherry or red-wine reduction, or classic French cuisine like beef filet with truffle jus and mushroom fricassée. It also works beautifully with aged hard cheeses such as Comté, Manchego, or a well-matured Cheddar. Serve at 16–18°C (60–64°F) to show the wine at its best. Decanting for 1–2 hours in its youth will help open the bouquet and soften the tannins; as it matures in bottle, a gentle 30–45 minute decant will be sufficient mainly to separate the wine from any sediment.
