Description
Château Canon 2017 is a refined Saint-Émilion red that captures the elegance and purity of its limestone terroir. Tasting Notes
In the glass, Château Canon 2017 shows a deep garnet-purple color with bright, youthful intensity. The nose is immediately expressive, opening with baked black cherries, kirsch, plum compote and black raspberries, layered with notes of red roses, Ceylon tea, black olives and a subtle hint of fertile clay and warm earth.
On the palate, this is medium-bodied and wonderfully elegant, emphasizing precision over power. Fine-grained, velvety tannins frame a core of ripe black and red fruits, while a vibrant line of acidity keeps everything fresh and lifted. Hints of minerality and savory tones build toward a long, focused finish that feels both polished and energetic. The 2017 Canon is approachable in its youth after a short decant, yet has the structure and balance to evolve gracefully for 10–15 years, and likely longer in excellent cellaring conditions.
Production
Château Canon sits on the famed limestone plateau just outside the village of Saint-Émilion, where thin clay soils over solid limestone give naturally low yields, superb drainage and a marked mineral character in the wines. The 2017 blend is 77% Merlot and 23% Cabernet Franc, sourced from carefully tended vineyards that are harvested by hand parcel by parcel at optimal ripeness. In the cellar, the grapes are sorted meticulously, then vinified in temperature-controlled vats to preserve purity of fruit and fine tannin structure. The wine is matured for 18 months in French oak barrels, 50% of which are new, adding subtle spice and complexity without overwhelming the natural elegance of the fruit and terroir.
Food & Serving
Château Canon 2017 is an ideal partner for classic dishes such as roast lamb with herbs, beef tenderloin, duck breast, veal chops, or game birds, as well as truffled poultry and mushroom-based dishes like porcini risotto. It also pairs beautifully with hard cheeses such as Comté or aged Gouda. Serve at 16–18°C (60–64°F) for optimal expression. Decanting for 1–2 hours before serving will help the aromatics unfurl and soften the tannins, especially in the wine’s first decade.
