This contrast generates morning mists and sunny afternoons, ideal conditions for Botrytis cinerea (noble rot) to slowly concentrate the berries. The blend typically centers on Sémillon, supported by Sauvignon Blanc and a touch of Muscadelle, harvested by hand in multiple passes through the vineyard to select only the perfectly botrytised grapes. In the cellar, the must is gently pressed and fermented slowly at controlled temperatures, often in oak barrels, before aging on lees in barrel to develop texture and complexity. The result is a richly flavored, finely balanced dessert wine that reflects both terroir and meticulous craftsmanship.

This Sauternes is a natural partner for classic foie gras terrine, blue cheeses such as Roquefort, and rich pâtés, where its sweetness and acidity cut through the fat.
