Grapes are typically harvested parcel by parcel at optimal ripeness, often by hand, allowing for careful selection in the vineyard and on sorting tables at the winery. Vinification combines traditional Bordeaux know-how with modern precision: fermentation takes place in temperature-controlled vats, with gentle extraction to preserve finesse and aromatics.
