The cool Burgundian climate and nuanced vineyard exposures help preserve aromatic intensity and freshness, particularly in a vintage like 2021. Grapes are typically harvested by hand to ensure meticulous sorting and to protect the delicate fruit. In the cellar, Chartron et Trébuchet favor a traditional Burgundian approach: gentle destemming (with the possible inclusion of some whole clusters depending on ripeness), a cold soak to enhance color and aroma, followed by a controlled fermentation in vat.
