Tasting Notes
In the glass, it shows a pale straw-yellow hue with a clean, luminous appearance. The nose is lifted and precise, with aromas of apple, citrus, and stone fruit, supported by a subtle herbal edge that adds complexity without overshadowing the fruit. The palate is sleek and focused, with bright acidity, crisp orchard fruit, and a refined sense of balance. A gentle texture from time in oak adds shape and depth, while the finish remains long, fresh, and pure. With its structure and lively acidity, it should drink well over the next few years.

Production
The grapes are grown under sustainable farming principles across select vineyards in Santa Barbara County, where maritime influence and cool temperatures help preserve freshness and aromatic clarity. Fermentation is carried out spontaneously to better reflect the character of the fruit and site, and the wine is aged for 12 months in old oak barrels with only a small proportion of new wood, allowing texture and structure without masking the wine’s purity.

Food & Serving
This Chardonnay pairs especially well with grilled or poached fish, shellfish, oysters, and lighter dishes such as roast chicken, risotto, or seasonal vegetable plates. Serve chilled at around 10–12°C. Decanting is not necessary, though opening the bottle a little before serving can help the wine show its full aromatic range.
