Tasting Notes
In the glass, Ruinart Blanc de Blancs shows a pale golden color with subtle green reflections, animated by a fine, persistent bead of bubbles. It has a crystalline brightness that hints at its freshness and finesse. The nose is delicate yet expressive, opening with notes of ripe citrus—lime, lemon zest, and grapefruit—followed by white flowers, fresh peach, and crisp green apple. With a moment in the glass, more complex layers emerge: chalky minerality, a touch of brioche, and subtle almond. On the palate, it is vibrant and poised, offering a silky, creamy texture supported by a precise, refreshing acidity. Flavors of citrus and stone fruits are joined by hints of pear, kumquat, and lightly toasted pastry, all carried by a clean, saline mineral line that lingers in a long, elegant finish. While delightful upon release, this NV Champagne can develop additional complexity over 3–5 years of cellaring, gaining more toasty and nutty nuances while retaining its core freshness.

Production
Ruinart Blanc de Blancs is sourced primarily from premier Chardonnay vineyards in the Côte des Blancs—known for its pure chalk soils—and select cool-climate sites in the Montagne de Reims and other Chardonnay-dominant areas of Champagne. These chalk-rich terroirs bring tension, finesse, and a signature minerality to the wine. Grapes are harvested by hand to ensure optimal selection and gentle handling, then pressed in whole clusters to preserve aromatic delicacy. The base wines are vinified in temperature-controlled stainless steel to emphasize purity and freshness, with malolactic fermentation typically encouraged to soften the natural acidity. A high proportion of reserve wines is blended into the cuvée to maintain the house’s consistent style year after year. After secondary fermentation in bottle, the wine matures sur lie in Ruinart’s historic chalk cellars (crayères), often for significantly longer than the minimum required, developing fine bubbles and added depth before disgorgement and dosage.

Food & Serving
This Champagne is superb as an aperitif, but its finesse also makes it a versatile partner at the table. Pair it with oysters, scallop carpaccio, turbot, Dover sole, or delicate white fish crudo, as well as sushi and sashimi where its citrus and mineral notes shine. It also complements fine shellfish—langoustines, lobster, crab—as well as light poultry dishes, vegetable tempura, and fresh goat’s cheese. Serve well-chilled, ideally at 8–10°C (46–50°F), in a white-wine-shaped Champagne glass to enhance the aromatics. Decanting is not necessary, but pouring the first glass and letting the wine open in the glass for a few minutes will allow its floral and brioche notes to fully unfold.
