Tasting Notes
In the glass, Ice Impérial shows a brilliant, pale gold hue with shimmering highlights and a lively, persistent mousse. The nose is exuberant and summery, opening with bright citrus notes of lime and lemon, followed by hints of ripe stone fruit, tropical nuances and a touch of fresh red berries.
On the palate, this Champagne is richer and rounder than the classic Moët Impérial, crafted to retain intensity and freshness when poured over ice. Expect generous flavors of juicy peach, nectarine and mango, framed by crisp citrus, a suggestion of strawberry and a subtle hint of mint and ginger. The dosage is a touch higher to balance the dilution from ice, giving a smooth, slightly off‑dry impression while the vibrant acidity keeps it refreshing and lively. Best enjoyed in the first few years after release for its vivid, fruit‑forward profile rather than for long-term cellaring.
Production
Moët & Chandon Ice Impérial is blended from the classic Champagne grapes—Pinot Noir, Pinot Meunier and Chardonnay—sourced from selected vineyards across the Champagne region in France. Pinot Noir provides structure and notes of red fruits, Pinot Meunier adds suppleness and roundness, while Chardonnay contributes finesse and freshness. Grapes are harvested by hand, as required in Champagne, to ensure only healthy, intact bunches reach the press. After gentle pressing and primary fermentation in stainless steel, the base wines from different crus, grape varieties and reserve vintages are expertly assembled to achieve the house’s signature style tailored specifically for serving on ice. A secondary fermentation in bottle follows, with aging on the lees in Moët & Chandon’s historic cellars to build texture, creaminess and fine bubbles before disgorgement and a carefully calibrated dosage.
Food & Serving
Designed as a versatile, playful Champagne, Ice Impérial shines with light, summery dishes and festive bites. Pair it with fresh fruit platters, sushi, ceviche, grilled prawns, salads with citrus dressings, or mild soft cheeses and charcuterie. Serve well-chilled at around 6–8°C (43–46°F) in a large wine glass rather than a flute, and always over several ice cubes to highlight its intended balance and aromatics. Garnishing the glass with a slice of citrus, fresh mint leaves, cucumber, or a ripe strawberry is not only visually striking but also accentuates the wine’s vibrant fruit and refreshing character.
