Production
Lété Vautrain works from vineyards rooted in the classic Champagne terroir of chalk and limestone-rich soils, which are key to the wine’s tension, minerality, and finesse. Grapes—primarily the traditional Champagne trio of Chardonnay, Pinot Noir, and Meunier—are harvested at optimal ripeness, typically by hand, to ensure that only healthy, intact bunches reach the press. The base wines are vinified separately by variety and parcel, then carefully blended to create the house’s characteristic Brut profile. Second fermentation takes place in bottle following the traditional méthode champenoise, with the wine resting on its lees to develop texture and complexity before disgorgement and a balanced dosage that results in a dry, food-friendly Brut style.

This magnum of Brut 204 is a versatile partner at the table, ideal as an apéritif with oysters, shrimp, caviar, or simple salted nuts and crisps. It pairs beautifully with sushi and sashimi, smoked salmon, fresh goat cheese, light poultry dishes, and delicate canapés, and it also complements classic French dishes like sole meunière or a creamy seafood risotto.
