Tasting Notes
In the glass, Cuvée No. 748 shows a bright, refined profile with delicate mousse and a sleek, polished appearance. The nose opens with citrus, pear, quince, and white flowers, followed by subtle hints of fresh-baked brioche and chalky minerality.
On the palate, it is both generous and focused, with lively acidity, fine texture, and a distinctly saline, limestone-driven finish. The low dosage gives the wine a very dry, transparent style that highlights its terroir expression. While already highly enjoyable, it has the structure and balance to develop beautifully over the next several years.
Production
The wine is drawn primarily from Jacquesson’s own vineyards in Aÿ, Dizy, Hautvillers, Champillon, Avize, and Oiry, where chalk-rich soils and low yields contribute to the wine’s precision and depth. The blend includes Chardonnay, Pinot Noir, and Pinot Meunier, with fruit selected to reflect the character of the 2020 harvest. Fermentation takes place in large, old oak barrels, and the wine is bottled without fining or filtration, preserving its texture and sense of place. Dosage is kept to just 2 g/l, underlining the house’s uncompromising approach to purity and terroir.
Food & Serving
This is a Champagne that shines with refined seafood, oysters, sashimi, lobster, roast chicken, or dishes with creamy sauces and subtle umami.
