Built around the 2019 harvest and shaped by carefully selected reserve wines, it delivers the precision, dryness, and finesse that have made Jacquesson’s numbered cuvées so highly regarded among Champagne lovers.

Tasting Notes
In the glass, Cuvée No. 747 shows a bright, refined profile with a fine mousse and a crystalline, mineral edge. Aromas of citrus zest, white flowers, stone fruit, hazelnut, and a subtle hint of brioche unfold with impressive clarity. The palate is taut and focused, combining concentrated fruit with chalky minerality and a distinctive saline streak on the finish. Thanks to its structure and low dosage, it already drinks beautifully now, but it also has the depth to gain additional complexity over the next few years.

Production
This cuvée is based primarily on the 2019 vintage, complemented by reserve wines from Jacquesson’s cellar, and blends approximately 43% Chardonnay, 30% Pinot Meunier, and 27% Pinot Noir. The grapes come exclusively from Premier Cru and Grand Cru vineyards across the Vallée de la Marne, Grande Vallée, and Côte des Blancs, where the fruit is farmed with minimal intervention and low yields to ensure concentration. Vinification takes place in oak barrels, with malolactic fermentation completed before extended aging on the lees for just over three years prior to disgorgement. The very low dosage of around 1.5 g/l preserves the wine’s dry, focused character and highlights its pure, mineral-driven style.

Food & Serving
Serve well chilled at 8–10°C. This Champagne is a natural match for oysters, shellfish, sashimi, ceviche, sushi, or delicate white fish, and it also pairs beautifully with creamy poultry dishes, aged Comté, or lightly salted snacks. Decanting is not necessary, but allowing it a few minutes in the glass can help the aromatic layers open up.
