Tasting Notes
In the glass, the 2023 Rosé de Saignée shows an intense, shimmering salmon to light ruby hue, with a fine, persistent mousse and delicate chains of bubbles. The color alone hints at the saignée method—deeper than classic rosé Champagne, yet still beautifully luminous and refined.
The nose is expressive and layered: wild strawberries, raspberries and redcurrants are joined by blood orange zest, rose petals and a touch of pomegranate. Subtle notes of freshly baked brioche, crushed chalk, white pepper and a hint of savory herbs unfold with air, adding complexity without ever weighing the wine down.
On the palate, this Champagne is dry, lively and precise, with the natural generosity of Pinot Meunier framed by a fine, chalky backbone. Juicy red berry and stone-fruit flavors—think wild strawberry, cherry and a touch of nectarine—are balanced by vibrant acidity and a faint, mouthwatering bitterness reminiscent of pink grapefruit and cranberry. The texture is both silky and structured, showing a slight tannic grip from the skin contact, making it particularly food-friendly. Production
Emmanuel Brochet farms his vines in and around Villers-aux-Noeuds, in the Montagne de Reims, where chalk-rich subsoils are overlaid with clay and sand, giving Pinot Meunier both lift and depth. The estate is cultivated according to sustainable, organic-leaning principles (with many parcels fully organic), favoring biodiversity, low yields and meticulous work by hand. Grapes for the Rosé de Saignée are harvested manually at optimal ripeness, with careful sorting to ensure only the healthiest bunches make it to the press.
For this cuvée, Brochet employs the saignée method: whole or partially destemmed Pinot Meunier berries undergo a short maceration on their skins, extracting color, aromatics and a gentle tannic structure before the lightly colored juice is drawn off. Fermentation typically takes place with indigenous yeasts in stainless steel and, in part, in oak barrels, preserving freshness while adding texture and nuance. The base wines are aged on fine lees before the secondary fermentation in bottle. After an extended period on the lees, the wine is disgorged with a restrained dosage, allowing the purity of fruit and the chalky, saline character of the terroir to shine through.
Food & Serving
This is a gastronomic rosé Champagne that shines at the table. Its vivid fruit and fine structure make it an excellent partner for charcuterie, duck rillettes, cured ham and terrines, as well as salmon tartare, tuna tataki or grilled prawns. It pairs beautifully with roast poultry, quail or guinea fowl with herb butter, and can stand up to richer dishes like veal with morel cream or mushroom risotto. For cheese, try it with soft-rind cheeses (Brie de Meaux, Chaource) or a mild, nutty Comté.
Serve well-chilled but not icy, ideally around 8–10°C (46–50°F) to let the aromatics unfurl. A white wine glass or tulip-shaped Champagne glass will show the wine at its best, emphasizing both bouquet and texture. Young vintages like the 2023 benefit from a brief 10–15 minutes of air in the glass; for more complexity, you can gently pour into a small carafe just before serving, but avoid extended decanting to preserve its delicate mousse.
