Champagne Billecart-Salmon Blanc de Blancs Grand Cru is a pristine expression of Chardonnay from some of Champagne’s most revered villages. Crafted exclusively from Grand Cru vineyards, this non-vintage cuvée captures the house’s signature elegance, precision, and purity. It brings together the finesse of Côte des Blancs terroirs with Billecart-Salmon’s long-standing expertise in crafting refined, age-worthy Champagnes.

Tasting Notes
In the glass, this Blanc de Blancs shows a luminous, pale gold hue with a fine, persistent bead that speaks to its careful maturation. The nose is delicate yet complex, offering notes of lemon zest, white flowers, green apple, and chalky minerality, supported by hints of brioche, almond, and fresh cream. On the palate, it is taut, vibrant, and silky, with a beautifully sculpted acidity that frames flavors of citrus, pear, and crisp stone fruits, layered over a distinctly chalky, saline backbone. Subtle pastry and hazelnut nuances emerge on the long, precise finish, evidence of time on the lees. While superbly enjoyable now for its tension and freshness, this Grand Cru Chardonnay has the structure and minerality to evolve gracefully over 5–10 years in the cellar, developing deeper brioche, honeyed and nutty notes.

Production
This cuvée is sourced exclusively from Grand Cru vineyards in the Côte des Blancs, typically including prestigious villages such as Avize, Cramant, Chouilly, Oiry, and Le Mesnil-sur-Oger. These chalk-rich slopes give the wine its hallmark precision, minerality, and finesse. Grapes are harvested by hand to ensure only the healthiest, perfectly ripe Chardonnay berries reach the press. Fermentation takes place at controlled, cool temperatures to preserve delicate aromatics, with a portion of reserve wines incorporated to maintain the house style. Extended aging on the lees in the cellars adds texture, depth, and fine mousse, before a carefully judged dosage is applied to highlight the wine’s natural balance and purity.

Food & Serving
This is a superb Champagne for refined pairings, shining alongside oysters, caviar, sashimi, and delicately prepared white fish or shellfish. It also complements dishes such as scallop carpaccio, lobster, lightly creamy seafood pastas, and fine goat’s or fresh cheeses. Serve well-chilled at 8–10°C (46–50°F) to emphasize its freshness and mineral tension. A short 15–20 minutes in the glass, or a brief, gentle decant in a wide-bowled Champagne glass, can help the aromas unfurl and reveal additional complexity.
