Tasting Notes
In the glass, Vénus 2016 shows a luminous pale gold color with a fine, persistent mousse. The nose is precise and layered, offering notes of citrus zest, white flowers, chalk, green apple, and subtle toasted brioche nuances that emerge with air. The palate is taut, dry, and mineral, with a focused line of acidity and a crystalline texture. Expect flavors of lemon peel, pear, crushed stone, and saline chalkiness, all carried by impressive tension and finesse. While already compelling, this vintage has the structure to evolve beautifully over time, gaining depth and complexity with bottle age.

Production
Vénus comes from a single Grand Cru vineyard in Avize, Fosse aux Pourceaux, an exceptional chalk-rich terroir well suited to Chardonnay. The grapes are harvested by hand and vinified with a natural, low-intervention philosophy that emphasizes transparency and site expression. As a Brut Nature Champagne, it is released without dosage, and the very late dégorgement close to release helps preserve freshness and immediacy.

Food & Serving
This Champagne pairs beautifully with oysters, sashimi, shellfish, crab, ceviche, roast chicken, or delicate goat cheese. Serve chilled at around 8–10°C to highlight its precision and minerality. Decanting is generally not necessary, though a short aeration in the glass can help open up its more nuanced aromas.
