Grapes are typically harvested by hand to ensure optimal ripeness and careful selection of bunches. The base wine is vinified using the traditional method, with the secondary fermentation taking place in bottle and the wine resting for an extended period on the lees to develop its fine bead and complex autolytic character. Gentle riddling and disgorgement complete the process, resulting in a sparkling wine that reflects both meticulous craftsmanship and the purity of its mountain terroir.

This Blauwal Brut Riserva 2010 is an excellent partner for refined seafood dishes such as oysters, scallop carpaccio, lobster, or delicately prepared fish, as well as sushi and sashimi. Serve well-chilled, ideally around 8–10°C (46–50°F), to highlight its freshness and finesse. A brief period in the glass is usually sufficient for it to open up, though you can gently pour into a chilled white wine glass rather than a narrow flute to better appreciate its aromatic complexity.
