Made as a Brut Nature with no dosage, it delivers remarkable precision, freshness and terroir expression at an exceptional value. Far from a simple apéritif sparkler, this is a serious, food‑friendly Crémant that stands out for its natural, hands‑off winemaking and gastronomic versatility. The wine comes from biodynamically farmed vines around 25 years old, rooted in deep clay-limestone soils in the small village of Loché. With spontaneous fermentations, no chaptalization, no fining and no added sulfur, Fleur d'Aligoté is a textbook example of the new wave of artisanal Burgundy fizz—respectful of tradition but uncompromisingly focused on purity and authenticity.

Tasting Notes
In the glass, Fleur d'Aligoté Brut Nature shows a pale straw to light lemon color with silvery reflections, animated by a fine, persistent bead of bubbles. The mousse is creamy yet delicate, giving the wine an elegant visual presence. On the nose, it opens with bright, zesty citrus—think lemon zest, lime and green apple—layered with notes of white flowers, crushed chalk, fresh bread dough and a subtle saline breeze. Hints of pear skin, almond and a faint herbal lift add complexity as it warms in the glass. The palate is taut, dry and incisive, true to its Brut Nature style, with a vibrant spine of acidity that feels both mouthwatering and refreshing. Crisp green apple, lemon pith and grapefruit are framed by chalky minerality and a lightly creamy texture from time on lees, giving the wine both tension and finesse. The finish is long, saline and clean, leaving a lingering impression of citrus zest and stone. The grapes for Fleur d'Aligoté Brut Nature come from biodynamically farmed parcels around the village of Loché in the Mâconnais, where 25‑year‑old Aligoté vines grow on deep clay‑limestone soils. This terroir provides both freshness and mineral tension, with the clay contributing texture and the limestone delivering precision and salinity. Harvesting is done entirely by hand to ensure meticulous selection of healthy, ripe grapes. After gentle pressing, the must is clarified by static sedimentation rather than mechanical means, preserving delicacy and nuance. The first fermentation proceeds with indigenous yeasts and, crucially for Burgundy, without chaptalization, allowing the natural ripeness of the fruit to define the wine. There is no fining and no sulfur addition, underscoring the domaine’s minimal‑intervention philosophy. The second fermentation takes place in the bottle following the traditional method, with extended lees contact to develop texture and complexity before disgorgement, all while maintaining the Brut Nature profile with no dosage.
