Designed by the innovative minds at Cantine Ceci in Emilia-Romagna, this sparkling red breaks the rules in the best possible way—refreshing, aromatic and irresistibly drinkable. Its unique balance of vibrant fruit and subtle sweetness makes it ideal for relaxed, social moments when you want something fun but still impeccably made.

Tasting Notes
In the glass, Otellon'Ice shows a deep ruby to purple hue, crowned with a lively, fine mousse and a persistent pink-tinged froth. The color is vivid and inviting, hinting at the juicy character to come. On the nose, you’ll find an explosion of fresh red fruits—think wild strawberries, ripe cherries and raspberries—wrapped in floral notes of violet and a touch of sweet spice. There’s an inviting, almost sherbet-like freshness to the aromatics that becomes even more pronounced when the wine is served very cold. The palate is light to medium-bodied, gently sparkling and wonderfully refreshing. Ripe red berry flavors are lifted by crisp acidity, with the natural sweetness (demi-sec) adding softness without feeling heavy or cloying. The extremely cold serving temperature helps keep the sweetness in the background, highlighting the wine’s crunchy fruit and bright, slightly tangy finish. Fine bubbles make it incredibly easy to drink, with a clean, refreshing aftertaste that invites another sip. While this non-vintage Lambrusco is not built for long-term cellaring, it will hold nicely for a year or two after purchase. It is at its best enjoyed young, when the fruit is at its most vibrant and the mousse at its most lively.

Production
Otellon'Ice Demi Sec is made from selected Lambrusco grapes grown in the gently rolling vineyard zones of Emilia-Romagna, a region famed for its gastronomic and winemaking traditions. The terroir combines fertile alluvial soils with a temperate climate, allowing Lambrusco to ripen with plenty of fruit character and natural acidity. Grapes are harvested at optimal ripeness to preserve freshness, typically in the cool of early morning to retain aromatic intensity. Vinification follows the Charmat (tank) method, ideal for preserving bright fruit and a lively bead: the grapes are softly pressed, with a controlled maceration on the skins to obtain the wine’s vivid color and aromatic profile. The secondary fermentation takes place in pressurized stainless-steel tanks, where Cantine Ceci carefully manages temperature and pressure to achieve the desired demi-sec sweetness level and fine, persistent bubbles. The result is a sparkling red that is technically precise yet unapologetically fun.

Ceci Otellon'Ice Demi Sec is made for uncomplicated enjoyment and shines with a wide range of dishes and occasions. Its chilled, fruity freshness pairs beautifully with charcuterie, Parma ham, mortadella, pizza, sliders, fried chicken, spicy Asian street food, or even gourmet burgers. The gentle sweetness also works with lightly spicy dishes and sweet-salty combinations—think prosciutto and melon, or Korean-style fried chicken. Serve well-chilled at 4–6 °C, and don’t be afraid to follow the producer’s suggestion: pour it over a few ice cubes in a large glass to emphasize its crispness and playfulness. Decanting is not necessary; simply open, chill hard, and enjoy immediately.
