Tasting Notes
In the glass, Cecchi Coevo 2021 shows a deep, intense ruby color with purple highlights along the rim, reflecting its youthful energy and concentration. The nose opens with ripe black cherry and dark plum, followed by layers of blackcurrant, violet, and wild herbs, supported by notes of cedar, tobacco leaf, graphite, and a touch of sweet baking spice from careful oak aging. On the palate, this is full-bodied yet finely structured, with Sangiovese bringing vibrant red fruit and acidity while Cabernet Sauvignon and Petit Verdot contribute depth, dark fruit, and a firm backbone of tannins. Merlot adds a plush, velvety texture, rounding out the mid-palate. Flavors of black cherry, blackberry, and cassis are intertwined with hints of licorice, cocoa, and savory Mediterranean herbs, leading to a long, poised finish. The 2021 vintage is approachable in its youth after a short aeration, but the balance of fruit, acidity, and tannin suggests an excellent aging potential of 8–12 years, during which it will gain further complexity and tertiary nuances.

Production
Coevo is sourced from carefully selected parcels in Tuscany, where vineyards enjoy a classic Mediterranean climate: warm, sunny days, cooling breezes, and significant diurnal temperature shifts that protect freshness and aromatic intensity. The soils are typically a mix of clay, limestone, and galestro (marl), providing both structure and elegance to the Sangiovese and the Bordeaux varieties. Grapes are harvested parcel by parcel at optimal ripeness, often by hand to ensure only the healthiest bunches reach the cellar. Each variety is vinified separately: gentle crushing and temperature-controlled fermentation help preserve aromatic purity, while extended maceration extracts color, flavor, and refined tannins. The wine is then matured in oak—primarily French barriques and larger barrels—for a period sufficient to integrate oak notes and polish the structure, before careful blending and further bottle aging to harmonize the components.

Food & Serving
Cecchi Coevo 2021 is a versatile yet sophisticated partner at the table, pairing beautifully with grilled or roasted red meats, Tuscan-style bistecca alla fiorentina, lamb chops with rosemary, and rich ragùs over pappardelle. It also complements aged pecorino, hard Parmesan, game dishes, and truffle-inflected cuisine. Serve at 16–18°C (60–64°F) to highlight its aromatic complexity and polish. Decant for 45–60 minutes in its youth to soften the tannins and allow the layered bouquet to fully unfold; as it matures, a shorter decant will suffice to wake the wine up before serving.
