Tasting Notes
In the glass, it shows a golden hue that hints at its richness and concentration. The nose opens with aromas of apricot, pineapple, lemon, and a subtle touch of vanilla, creating an inviting mix of ripe fruit and oak complexity.
On the palate, white pear leads the way, followed by grilled pineapple, vanilla, and fresh citrus that keep the wine lively and balanced. The texture is creamy and full, with enough freshness to carry the richness through the finish. Production
Mer Soleil comes from the Santa Lucia Highlands near Monterey, a prized vineyard area shaped by maritime influence from the nearby Pacific Ocean. Morning and evening fog help preserve acidity and freshness, while the warm afternoons allow the Chardonnay to develop ripe fruit character and depth. The grapes are carefully harvested and vinified to capture both the vineyard’s cool-climate precision and the rounded, expressive style associated with top California Chardonnay.
Food & Serving
This Chardonnay pairs beautifully with roast chicken, butter-poached lobster, creamy pasta dishes, seared scallops, and rich seafood preparations. It also works well with soft cheeses and dishes featuring roasted vegetables or subtle spice. Serve slightly chilled at around 10–12°C, and decanting is not necessary, although a short time in the glass will help the aromatics open further.

Caymus Vineyards was founded in 1972 in Napa Valley by Chuck Wagner and his parents, Charlie and Lorna, though the family’s agricultural roots in the region go back to 1857. Today, Caymus is one of California’s most respected wine families, best known for Cabernet Sauvignon but also widely admired for standout wines across several varieties, including Chardonnay. The Wagner family’s quality has been recognized at the highest level, with both Charlie and Chuck Wagner inducted into Wine Spectator’s Hall of Fame, and the next generation continues to carry the legacy forward with impressive success.
