This is a Barolo that feels graceful and inviting today, yet clearly built on the classic bones that reward patience in the cellar.

Tasting Notes
In the glass, the 2021 Bricco Boschis shows a luminous garnet core with brick-red hues at the rim, typical of fine Nebbiolo even in its youth. On the nose, it opens with precise aromas of Morello and black cherries, wild berries and dried rose petals, layered with notes of underbrush, licorice, subtle spice and a hint of tar and tobacco that speak of its Piedmontese origin. There is a gentle, natural sweetness to the fruit profile—not sugary or showy, but the kind of ripeness that comes from a warm, balanced vintage. The palate is at once fresh and firmly structured. Bright acidity carries flavors of red cherry, blood orange, raspberry and a touch of balsamic herbs, while fine, silky tannins build gradually across the mid-palate. Despite its generous 14.5% alcohol, the wine feels focused and taut rather than heavy; the alcohol is seamlessly integrated and never dominates. The finish is long and clean, with persistent red fruit, savory undertones and polished, Barolo-typical tannin that is robust without being drying. While already harmonious and a pleasure to drink young with some air, this 2021 clearly has significant aging potential, likely evolving beautifully over 12–20 years, gaining complexity in truffle, leather and earthy nuances.

Production
Bricco Boschis is a single hillside vineyard in Castiglione Falletto, a prized Barolo commune known for combining finesse with structure, thanks to its calcareous marl soils and ideal south and southwest exposures. Cavallotto farms these slopes organically and harvests Nebbiolo by hand, parcel by parcel, to capture optimal ripeness while preserving natural acidity. In the cellar, the approach is deliberately traditional: a gentle crushing and destemming, followed by long fermentations and macerations on the skins to extract aromatic complexity and fine-grained tannins. The wine is then aged for an extended period in large, neutral Slavonian oak casks (botti), allowing it to develop harmony and depth without overt oak flavor, before resting further in bottle prior to release.

Food & Serving
This Barolo shines alongside refined yet flavorful dishes such as braised veal shank (ossobuco), slow-cooked beef cheeks, roasted lamb, game birds, and classic Piemontese fare like tajarin with ragù or mushroom risotto. It also pairs beautifully with aged cheeses such as Parmigiano Reggiano, Castelmagno or mature pecorino. Serve at 16–18°C (around 61–64°F) in large Burgundy or Nebbiolo stems to allow the bouquet to open fully. For current drinking, decanting for 1–2 hours is recommended to soften the youthful tannins and reveal the full spectrum of aromas; older bottles will benefit from a more delicate, shorter decant.
