Production
Cava Vega Medien Zero is sourced from vineyards in Spain’s Cava region, where a Mediterranean climate, cooling breezes and limestone-rich soils provide ideal conditions for the traditional Cava grapes. Grapes are typically harvested in the cool of the early morning to preserve acidity and delicate aromatics, then quickly transported to the winery. After gentle pressing, the base wine is fermented at controlled, cool temperatures to retain freshness and fruit purity. The second fermentation takes place in bottle following the traditional method (método tradicional), creating its fine natural bubbles. The wine then rests on its lees for several months to build texture and complexity before disgorgement, with little to no dosage added to preserve its dry, “Zero” style.

Food & Serving
This ultra-dry Cava is a natural partner for seafood and light, savory dishes. Try it with oysters, prawns, grilled fish, sushi, ceviche, or simple tapas like salted almonds, jamón, boquerones and Manchego cheese. Its crisp acidity also cuts nicely through fried foods such as calamari or croquettes. Serve well-chilled at around 6–8°C (43–46°F) for maximum freshness. Decanting is not necessary, but opening the bottle a few minutes before serving and pouring into proper sparkling wine flutes or white wine glasses will allow the aromas to open up beautifully.
