Tasting Notes
Pale straw in the glass, this Vermentino opens with an inviting nose of lemon zest, white flowers, and a hint of Mediterranean herbs and spice. The aromatic profile is clean and lifted, with a freshness that immediately signals a vibrant, food-friendly wine. On the palate, it is crisp and well balanced, combining bright fruit with lively acidity and a subtle saline, mineral feel that adds depth and length. A short period on the lees gives the wine a little more texture and roundness without losing its clarity. Best enjoyed young and fresh, though it should hold its charm over the next 2–3 years.

Production
The grapes are sourced from Castello di Collemassari’s vineyards at around 300 meters above sea level, planted on sandstone soils that help preserve freshness and aromatic precision. The fruit is harvested to retain purity and balance, then fermented in stainless steel at low temperatures to protect the grape’s natural character. After fermentation, the wine spends a short period on its lees in tank before bottling, adding subtle texture and complexity.

Food & Serving
This Vermentino is an excellent match for grilled or baked fish, shellfish, seafood pasta, and light Mediterranean dishes. It also works beautifully as an aperitif. Serve chilled at around 8–10°C, and decanting is not necessary.
