Tasting Notes
In the glass, it shows an intense purple-red color with ruby reflections, hinting at its concentration and youthful energy. The nose is fruit-driven and layered, with notes of blackberry at the core, lifted by ripe pepper, green pepper, nutmeg, sandalwood, and a subtle balsamic, almost menthol-like nuance. The palate is rich and full-bodied, yet refined and supple, with a smooth texture and a persistent finish. Sangiovese brings freshness and backbone, while Cabernet Franc and Merlot add depth, spice, and roundness. It already offers a generous drinking experience, but it should also develop beautifully over the next several years.

Production
Made in Toscana IGT, Haiku is produced from a blend of Sangiovese, Cabernet Franc, and Merlot, with each grape vinified separately in temperature-controlled stainless steel tanks. Fermentation uses native yeast, helping preserve a strong sense of place and the distinctive character of the estate’s fruit. The wine is then aged for 12 months in fine-grained oak barrels, adding polish, spice, and subtle structure to the final blend.

Food & Serving
This is an excellent match for roasted lamb, grilled beef, braised game, mushroom-based dishes, and aged pecorino. Serve at around 16–18°C, and consider decanting for 30–60 minutes to let the aromatics and texture fully open up.
