Tasting Notes
In the glass, Coniale 2021 typically shows a deep, vibrant ruby color with youthful purple reflections at the rim, hinting at both concentration and freshness. The nose is refined and layered: classic Cabernet aromas of blackcurrant, blackberry and ripe plum are joined by notes of cedar, graphite and tobacco leaf, with subtle hints of violets, sweet spice and a touch of Tuscan earth. On the palate, the wine is medium to full-bodied but deliberately geared toward elegance rather than sheer weight. Fine-grained, well-integrated tannins frame flavors of dark berries, cassis and black cherry, lifted by fresh acidity and a mineral edge that speaks to its hillside origins. Oak is discreet and supportive, adding gentle notes of vanilla, cocoa and pencil shavings without overpowering the fruit. The finish is long, savory and poised, suggesting solid aging potential: expect the 2021 to develop beautifully over 8–12 years from vintage, gaining complexity in the form of leather, tobacco and truffle nuances while retaining its core of Cabernet fruit.

Production
Coniale is sourced from Castellare di Castellina’s carefully selected Cabernet Sauvignon parcels in Tuscany, where stony, well-drained soils and significant diurnal temperature shifts help grapes ripen slowly and evenly. The terroir combines calcareous marl and galestro (friable shale) typical of the Chianti area, lending both structure and a distinct mineral backbone to the wine. Grapes are harvested by hand at optimal ripeness, allowing for rigorous selection of only the healthiest bunches in the vineyard and again in the cellar. Fermentation takes place in temperature-controlled vessels to preserve aromatics and ensure a gentle extraction of color and tannin, followed by maturation in fine-quality oak (often French barriques) to polish the structure and add subtle complexity, all with the clear aim of achieving elegance rather than excessive power.

Food & Serving
Coniale 2021 is a natural partner for refined meat dishes such as Tuscan-style bistecca alla fiorentina, grilled ribeye, roast lamb with rosemary, or slow-braised beef cheeks. It also pairs beautifully with game birds, venison, aged pecorino, Parmigiano Reggiano and truffle-infused pasta or risotto. Serve at 16–18°C (60–64°F) to highlight its aromatic complexity and freshness. For young vintages like 2021, decanting for 1–2 hours is recommended to allow the wine to open fully and soften its tannins; older bottles can be decanted more gently, mainly to remove any sediment.
