Case Paolin’s San Carlo 2020 is a certified organic red from the Montello hills in Veneto, offering a compelling mix of power, finesse, and age-worthy structure. Crafted from Cabernet Sauvignon, Merlot, and Cabernet Franc, it reflects the elevated vineyards and sun-drenched slopes of Treviso, where the style is both concentrated and elegantly balanced.

Tasting Notes
In the glass, the wine shows an intense ruby-red color. The bouquet is layered and expressive, with ripe red and dark berries such as raspberry and blackberry, lifted by spice, vanilla, and subtle oak notes. On the palate it is full-bodied, round, and persistent, with soft tannins and a harmonious, long finish. Thanks to its structure and careful élevage, it has strong aging potential and should develop beautifully over the next several years.

Production
San Carlo comes from the Montello hills in the Treviso area, where higher-altitude vineyards and excellent sun exposure help the grapes reach full ripeness while retaining freshness. The blend is vinified separately by varietal, then aged for 12 to 14 months in French barriques before further maturation in large oak casks and bottle, building depth, texture, and balance.

This is a versatile gastronomic red that pairs especially well with grilled meats, game, and mature cheeses. Serve at 18 to 20°C, and decanting is recommended if the wine is young or if you want to open up its aromas and soften the structure.
