Case Paolin Rosso del Milio 2021 is an organically certified red from the Montello hills of Veneto, where Merlot and Carmenère take on a warm, northern Italian character. It combines ripe fruit, gentle spice, and polished structure, offering a classic Bordeaux-inspired blend with a distinctly Venetian identity.

Tasting Notes
In the glass, it shows a ruby-red color with violet reflections, suggesting youthful energy and freshness. The nose is bright and fruit-forward, with aromas of red cherries, raspberries, and dark berries, lifted by subtle notes of cinnamon, vanilla, and oriental spice. On the palate, the wine is full-bodied, harmonious, and persistent, finishing dry with soft, well-integrated tannins. Its balance of fruit, spice, and structure gives it both immediate appeal and enough substance to evolve gracefully over the next few years.

Production
The grapes come from the Montello hills in Veneto and are harvested by hand in early October. After picking, the Merlot and Carmenère undergo 12 to 15 days of skin contact at controlled temperature to build color, texture, and balance before the wine is aged for 12 to 18 months in large oak casks, which help soften the tannins and add depth without overpowering the fruit.

Food & Serving
This wine pairs beautifully with both red and lighter meats, as well as mature semi-aged cheeses. Serve at 18–20°C; decanting is optional, but a short aeration can help open up its aromatic spice and soften the structure if the wine is served young.
