Cascina San Pietro Franciacorta Pas Dosé Cuvée Terre dei Trici 2019 is a refined, terroir-driven sparkling wine crafted entirely from carefully selected Chardonnay grapes. Made in the traditional method and bottled without dosage, it offers a pure, unadorned expression of Franciacorta and its limestone-rich hillsides in Lombardy, Italy. Tasting Notes
In the glass, Terre dei Trici 2019 presents a luminous straw-yellow hue with fine, persistent bubbles forming a delicate and continuous mousse. The nose is precise and elegant, offering notes of green apple, lemon zest, white peach and crunchy pear, layered with hints of white flowers, fresh bread crust, chalk and a subtle touch of hazelnut.
On the palate, this Pas Dosé is dry, linear and focused, with racy acidity and a clean mineral backbone that drives the wine from start to finish. Flavors of citrus, orchard fruit and a whisper of brioche unfold with time in the glass, leading to a long, saline and refreshingly crisp finish. The absence of dosage highlights its tension and precision, making it especially appealing to lovers of bone-dry sparkling wines. Production
The grapes for Cascina San Pietro’s Terre dei Trici are sourced from Chardonnay vineyards in Franciacorta, where vines grow on morainic and calcareous soils that lend natural freshness and a distinct mineral edge to the wines. Harvest is typically carried out by hand to ensure only perfectly healthy, ripe bunches are selected for pressing. The base wine is produced using gentle whole-bunch pressing and cool fermentation to preserve aromatic purity, followed by secondary fermentation in bottle according to the traditional method. The wine then rests sur lattes on its lees for an extended period to gain texture and complexity before being released as Pas Dosé—without any added sugar at disgorgement—to faithfully reflect the character of the vintage and the terroir.
Food & Serving
This Franciacorta Pas Dosé is a versatile partner at the table, ideal with oysters, scallops, sushi and sashimi, as well as crudo, tartare, or simply prepared white fish. It also complements fresh goat cheese, burrata with olive oil and sea salt, vegetable tempura, or light poultry dishes and risotti with seafood or spring vegetables. Serve well-chilled at around 6–8°C (43–46°F). A brief 10–15 minutes in the glass or an elegant, narrow decanter can help the wine open up aromatically, especially if served closer to cellar temperature.
