Carsten Saalwächter’s Weißer Burgunder from Ingelheim is a finely chiseled, limestone-driven Pinot Blanc that rewards patience and a bit of air. Sourced from 28-year-old vines in the single vineyard Steinacker, it shows a calm, bright fruit profile layered with subtle herbal and yeasty nuances. Handcrafted with minimal intervention and bottled unfiltered, this is a serious, terroir-focused white for drinkers who appreciate precision over flamboyance.

Tasting Notes
In the glass, this Weißburgunder appears pale straw with a subtle greenish hue, hinting at both freshness and tension. The initial nose is reserved and benefits from a good swirl or a short decant: once it opens, the wine reveals a delicate bouquet of yellow apple, quince and light stone fruit, wrapped in fine herbal tones, fresh dough and leesy notes, plus a faintly ethereal lift. A touch of reduction (“Böckser”) can show at first, but it quickly blows off, adding initial complexity rather than distraction. On the palate, the wine is dry, clean and finely structured, with a chalky, almost powdery minerality that clearly speaks of its limestone origins. Bright, cool fruit—yellow apple, pear skin and quince—meets subtle spice, hints of crushed herbs and a gentle phenolic grip that gives shape to the long, saline finish. The texture is silkier than the restrained nose suggests, supported by fresh but not aggressive acidity. Enjoyable now with sufficient aeration, it has the concentration and structure to develop further complexity over the next 4–6 years, gaining more creaminess and tertiary notes while retaining its mineral backbone.

Production
The grapes come from 28-year-old Weißburgunder vines rooted in the classic, limestone-rich soils of Ingelheim’s Steinacker site, a terroir that naturally yields wines with clarity, tension and a salty mineral edge. The fruit is harvested entirely by hand, allowing strict selection in the vineyard. Saalwächter works with a very gentle, very slow pressing over roughly 24 hours, followed by spontaneous fermentation with indigenous yeasts. The wine is raised on its full lees in traditional 600-liter Halbstück oak casks, where it rests for an extended period with minimal intervention, gaining texture and subtle complexity. It is bottled without fining or filtration, preserving the wine’s authentic expression and delicate structure.

Food & Serving
This refined Weißer Burgunder is a versatile food partner, particularly well-suited to subtly flavored dishes. Think lightly grilled or poached white fish, ceviche, scallops, poultry in light cream or lemon-herb sauces, asparagus dishes, vegetable tarts and mild to medium-soft cheeses such as young goat cheese or bloomy rind cheeses. Serve at 9–11 °C to highlight its freshness and mineral core; slightly warmer temperatures will bring out more leesy creaminess and fruit. Because the wine is initially a bit reserved and can show a touch of reduction, opening it 30–60 minutes in advance or giving it a brief decant is recommended, especially in its youth.

Working from limestone-rich sites traditionally known for quality, he focuses on meticulous vineyard work, low yields and a distinctly artisanal approach in the cellar, emphasizing spontaneous fermentations, long lees aging and minimal intervention. In a relatively short time, his precise, characterful wines—especially his Burgunder and Riesling bottlings—have attracted considerable attention from sommeliers and wine enthusiasts, positioning the estate as one of the most exciting up-and-coming names in the region.
