Tasting Notes
In the glass, the red wines in this collection (Saint-Émilion, Pomerol, Pauillac, Pessac-Léognan and Margaux) typically show deep ruby to garnet hues, with a luminous, refined color rather than sheer opacity—a hallmark of the elegant 2021 style. Château d’Yquem, the included Sauternes, glows a brilliant golden-yellow that will deepen into a rich amber with time.

Production
The Duclot Collection brings together estates that sit on some of Bordeaux’s most revered terroirs—limestone and clay slopes in Saint-Émilion for Ausone and Cheval Blanc, the blue clay plateau of Pomerol for Petrus, the deep gravel croupes of Pauillac and Margaux for Lafite, Mouton and Château Margaux, and the gravel-clay soils of Pessac-Léognan for Haut-Brion and La Mission. These châteaux employ meticulous vineyard practices: strict pruning, green harvesting when required, and almost exclusively manual picking, often in multiple passes to ensure perfect ripeness bunch by bunch. In the cellar, vinification is highly controlled and tailored to each parcel—small-lot fermentations, temperature control, careful extraction, and extensive selection at every stage. Aging typically takes place in high-quality French oak barriques (with a generous proportion of new oak for the grands vins), allowing the wines to gain texture, aromatic complexity and longevity while preserving the identity of each terroir. Duclot’s role is to assemble and release this original wooden case directly from the châteaux, ensuring impeccable provenance.
Food & Serving
This collection offers remarkable versatility at the table. The grand red wines are natural partners for refined dishes such as roasted or grilled lamb, dry-aged beef, veal, game birds, pigeon, and slow-braised dishes with mushrooms or truffle, as well as aged hard cheeses like Comté or aged Gouda. More structured, Cabernet-driven wines like Lafite, Mouton and Château Margaux shine with roasted meats and dishes featuring rosemary or thyme, while the Merlot- and Cabernet Franc–dominant Ausone, Cheval Blanc and Petrus are sublime with richer, more delicate textures such as veal, duck breast, or truffle risotto. Château d’Yquem is stunning with foie gras, lobster in a lightly sweet glaze, blue cheeses, or classic fruit-based desserts such as tarte Tatin or apricot tart. Serve the red wines around 16–18°C (60–64°F), decanting younger bottles for 1–3 hours to allow them to open fully. For Château d’Yquem, serve slightly chilled at about 10–12°C (50–54°F); decanting 30–60 minutes before serving can help the aromatics blossom, especially as the wine gains age.
