Sourced from vineyards in Trentino–Alto Adige, Caldaro Sauvignon Stern 2024 benefits from cool mountain air, abundant sunshine and well-drained, calcareous and gravelly soils—conditions that are ideal for preserving Sauvignon Blanc’s natural acidity and aromatic detail. The grapes are typically harvested by hand at optimal ripeness to retain freshness and avoid overripe flavours. In the cellar, the must is gently pressed and fermented at controlled, cool temperatures in stainless steel to safeguard the variety’s delicate aromatics and crisp profile. The wine is then rested on fine lees for a short period to add a touch of texture and finesse without overshadowing its clean, vibrant character.

This wine’s bright acidity and subtle aromatics make it an excellent partner for light, refined dishes. Pair Caldaro Sauvignon Stern 2024 with fresh goat cheese, grilled white fish, shellfish, sushi, seasonal salads with herbs, asparagus, or simple vegetable risottos.
