Yields are kept deliberately low, and grapes are harvested by hand at optimal ripeness, with strict selection both in the vineyard and at the winery. True to Ca’ del Bosco’s meticulous philosophy, the bunches undergo a gentle washing and drying process before pressing, followed by soft, fractional pressing to capture only the purest juice. Fermentation typically takes place in a combination of stainless steel and carefully chosen French oak barriques, with a period of maturation on the fine lees to build texture and complexity, and judicious bâtonnage to integrate oak and enhance the wine’s creamy depth without overpowering its vibrant fruit.
