Tasting Notes
In the glass, Franciacorta Satén 2006 shows a deep straw color with golden highlights, a visual clue to its age and extended time on the lees. The perlage is fine and persistent, forming a soft, creamy mousse that is a hallmark of the Satén style. On the nose, it opens with ripe yellow orchard fruits—baked apple, pear, and mirabelle—intertwined with lemon zest, candied citrus peel, and delicate floral notes. With aeration, more complex layers emerge: toasted brioche, roasted hazelnuts, vanilla cream, and a subtle hint of chalky, flinty minerality.
The palate is medium to full-bodied, yet impeccably balanced by lively acidity. The mousse is silky and velvety rather than aggressively bubbly, wrapping around flavors of ripe stone fruit, citrus curd, honeyed notes and gently toasted nuts. Hints of buttered brioche, almond paste and a saline, mineral edge add depth and precision. The finish is long, dry and elegant, with lingering notes of citrus, hazelnut and wet stone. Thanks to its 60 months on the lees and the quality of the 2006 vintage, this Satén is already beautifully evolved, but well-stored bottles can continue to develop tertiary nuances—dried fruit, truffle, and more pronounced pastry tones—over the next several years.
Production
The grapes for Ca’ del Bosco Franciacorta Satén 2006 come from sustainably farmed vineyards in the heart of Franciacorta, in Lombardy. These sites are rooted in glacial moraine soils rich in limestone and minerals, providing excellent drainage and a natural tension between ripeness and freshness in the grapes. Chardonnay forms the core of the blend, complemented by a smaller portion of Pinot Bianco, both harvested by hand into small crates to preserve berry integrity. After a careful selection and gentle pressing, the must is fermented in small oak barrels, where it rests for about six months, gaining texture and aromatic complexity. The base wines are then blended and bottled for the second fermentation following the metodo classico, after which the wine remains on its lees for a remarkable 60 months. This extended aging builds depth, creaminess and fine bubbles before disgorgement and a carefully judged brut dosage.

This Satén is an exceptionally versatile food wine, ideal as an elevated aperitif or at the table. It pairs beautifully with refined dishes such as oysters, scallop carpaccio, lobster, sushi and sashimi, as well as delicate fish and shellfish pastas, risotto with seafood, or veal carpaccio. Its nutty, brioche-driven complexity also complements aged cheeses, mild goat cheese and truffle-accented dishes. For best enjoyment, serve at 8–10 °C in a white wine or tulip-shaped sparkling glass to showcase the aromas and texture. A gentle decant—or simply opening the bottle 10–15 minutes before serving—can help the mature notes unfurl, but avoid vigorous aeration to preserve the delicate mousse.
