Tasting Notes
In the glass, this Franciacorta Rosé shows a luminous, delicate onion-skin to pale salmon hue, crowned by a fine, persistent perlage that speaks to its meticulous traditional-method production. The nose is inviting and precise, with notes of wild strawberries, fresh raspberries, red currants and pomegranate, layered with hints of rose petals, citrus zest, and subtle brioche.
On the palate, it is dry, elegant and tightly structured, showcasing the tension and backbone of Pinot Nero supported by the creamy texture of Chardonnay. Fresh red berry fruit—strawberry, raspberry and a touch of cranberry—unfolds alongside mineral nuances and a gentle toastiness from extended lees contact. The finish is long, clean and refreshing, with a vibrant acidity that keeps the wine poised and lively. While designed to be enjoyed on release, this non-vintage cuvée has the structure to develop additional complexity over 3–5 years in bottle, gaining more autolytic notes and depth.
Production
Grown in the rolling hills of Franciacorta in Lombardy, the grapes for this Brut Cuvée Rosé benefit from a unique terroir shaped by glacial moraines, well-draining mineral-rich soils, cooling breezes from Lake Iseo and protective mountain ranges. These conditions allow Pinot Nero and Chardonnay to ripen slowly, preserving acidity and aromatic purity—essential for high-quality sparkling wine. The grapes are harvested by hand, parcel by parcel, to ensure optimal ripeness and careful selection in the vineyard. Ca’ del Bosco is renowned for its ultra-precise vinification: the grapes are gently pressed, and the base wines are fermented separately in stainless steel and, in part, in small oak, before meticulous blending. The traditional method (méthode classique) second fermentation takes place in bottle, followed by extended lees aging to build texture, complexity and the wine’s signature fine, persistent mousse. Strict controls on dosage maintain a dry, balanced style.
Food & Serving
This refined Franciacorta Rosé is a versatile partner at the table, pairing beautifully with charcuterie, sushi and sashimi, tuna tartare, and delicate dishes featuring salmon or trout. It is equally at home alongside grilled prawns, shellfish, creamy risottos, light poultry dishes, and soft to semi-hard cheeses. Serve well chilled, ideally at 8–10 °C (46–50 °F), to highlight its freshness and fine bubbles. A brief decant is not necessary, but pouring the first glass and allowing the wine a few minutes in the glass will help the bouquet open up and reveal its full aromatic range.
