Ca' dei Frati Cuvée dei Frati Dosaggio Zero Metodo Classico is a refined, bone-dry sparkling wine from the shores of Lake Garda in Lombardy. Crafted primarily from the local Turbiana grape, with a touch of Chardonnay, it offers a vibrant, elegantly structured style that highlights purity over sweetness. This Pas Dosé cuvée showcases Ca’ dei Frati’s pioneering work with traditional-method sparkling wines in a region better known for still Lugana whites.
Tasting Notes
In the glass, this Metodo Classico shows a pale straw to light gold hue with a fine, persistent perlage that forms a delicate mousse. The nose is lifted and expressive, with notes of green apple, crisp pear, lemon zest and white flowers, layered with subtle hints of brioche, almond and a light mineral salinity derived from its Lake Garda origins.
On the palate, it is dry and linear, with no dosage to mask the naturally lively acidity of Turbiana. Flavors of citrus, green stone fruit and fresh herbs mingle with a gently creamy texture from extended lees aging, giving both tension and depth. The finish is long, clean and savory, with a chalky, saline edge that invites another sip. With around 36 months on the lees, this wine has the structure to evolve for several years in bottle, gaining additional complexity and autolytic nuance while maintaining its backbone of freshness.
Production
The grapes for Cuvée dei Frati Dosaggio Zero are sourced from vineyards near Lake Garda in Lombardy, where the mild climate, cooling breezes and mineral-rich, glacially influenced soils provide ideal conditions for Turbiana and Chardonnay. Harvest is typically carried out with careful selection to preserve acidity and aromatic purity, picking at the optimal moment of ripeness for sparkling wine. After gentle pressing, the base wines are vinified separately at controlled temperatures to preserve their delicate fruit profile. The second fermentation takes place in bottle using the Metodo Classico, followed by approximately 36 months of aging on the lees, which deepens flavor and texture. The wine is released without dosage (Pas Dosé), allowing the natural character of the grapes and terroir to take center stage.
Food & Serving
This crisp, dry sparkling wine is a natural partner for seafood—think oysters, shrimp tartare, crudo, sushi and delicate white fish, as well as fried seafood where its acidity cuts beautifully through the richness. It also works well with fresh goat cheese, young hard cheeses, light vegetable dishes and appetizers such as tempura or vegetable fritters. Serve well-chilled at about 6–8°C (43–46°F) to highlight its precision and freshness. A brief 10–15 minutes in the glass or in an open bottle is sufficient; extended decanting is not necessary, but pouring into larger tulip-shaped sparkling glasses will help the aromas fully unfold.
