After a gentle pressing and cool fermentation of the base wines, Buvoli employs a solera-inspired blending system, retaining portions of older wines and combining them with more recent harvests to build complexity and consistency from year to year. The wine then undergoes second fermentation in bottle using the metodo classico, followed by an extended period on the lees to develop fine mousse and autolytic character before riddling, disgorgement and a very low dosage to preserve its Extra Brut profile.
