Tasting Notes
In the glass, Cinque Pas Dosé shows a luminous straw-yellow hue with silvery highlights and an exceptionally fine, persistent mousse. The perlage is delicate yet energetic, forming a refined crown of bubbles that hints at lengthy lees aging. The nose opens with crisp green apple, lemon zest, and white peach, followed by notes of fresh bread crust, chalk, and a touch of white flowers. Subtle hints of almond, wet stone and a gentle, smoky mineral edge add complexity. On the palate, this is bone-dry, taut and incisive, with a firm backbone of acidity and a wonderfully creamy texture from extended time on the lees. Flavors of citrus, green pear and crunchy orchard fruit are layered with brioche, hazelnut and a saline, mineral finish that is both long and precise. The wine is drinking beautifully now but has the structure and freshness to develop further complexity over the next 3–5 years, gaining more autolytic and nutty nuances with time in bottle.

Production
Buvoli – L’Opificio del Pinot Nero sources fruit from carefully selected vineyards in Veneto, where cooler exposures and well-drained, calcareous soils help preserve acidity and aromatic precision. Grapes are harvested by hand at optimal ripeness to balance sugar and acidity, with strict selection both in the vineyard and at the winery. The base wines are vinified in stainless steel (and in some cases partly in neutral oak) at controlled temperatures to retain purity and finesse. After blending, the wine undergoes a classic second fermentation in bottle, following the Metodo Classico (traditional method). It then rests sur lie for an extended period, allowing the fine bubbles to develop and the wine to gain complexity and textural richness. Being Pas Dosé, no dosage is added at disgorgement, revealing the wine’s natural balance and the clarity of the terroir.

Food & Serving
Cinque Pas Dosé is a superb partner for oysters, crudo, sashimi, carpaccio of sea bass or tuna, and simply prepared shellfish such as prawns, scallops and clams. It also pairs beautifully with tempura, light vegetable starters, fresh goat cheese, sushi, and delicate fish dishes, as well as prosciutto crudo and other fine cured meats. Serve well-chilled at around 6–8 °C (43–46 °F) to highlight its tension and minerality. A brief 10–15 minutes in the glass is often enough to let the wine open up; decanting is generally not necessary, but pouring into a slightly larger white wine glass rather than a narrow flute can enhance the aromatic expression.

From its base in Veneto, L’Opificio del Pinot Nero has carved out a reputation as one of Italy’s most serious, artisanal producers of Metodo Classico wines, working on a small scale with obsessive attention to detail. The estate focuses primarily on Pinot Noir, applying low yields, rigorous selection and extended lees aging to create wines of finesse, structure and longevity. Over the years, Buvoli’s cuvées have gained recognition among sommeliers and collectors for their precision, elegance and distinctly Italian interpretation of classic méthode traditionnelle sparkling wine.
