Tasting Notes
In the glass, it typically shows a bright golden hue with a fine, persistent mousse. The nose is fresh and layered, with notes of citrus peel, green apple, white flowers, and subtle brioche, complemented by a mineral edge. On the palate, it is lively and precise, balancing crisp acidity with ripe fruit, fine texture, and a dry, elegant finish. The extra brut dosage keeps the wine taut and focused, while the complexity suggests good development over time, especially if cellared under ideal conditions.

Production
This Champagne comes from carefully selected vineyards across the region, where the terroir contributes freshness, structure, and aromatic depth. Grapes are typically harvested by hand to preserve quality, then vinified with a focus on maintaining clarity, finesse, and the identity of the blend. The extra brut style reflects a restrained dosage designed to highlight the wine’s natural balance and precision.

Food & Serving
Excellent with oysters, sashimi, shellfish, caviar, and delicate seafood dishes, as well as roast poultry or creamy soft cheeses. Serve chilled at around 8–10°C, and decanting is not recommended; a short rest in the glass is enough to let the aromas open.

Crisp, pure multi-vintage Champagne made only from first-press juice, blending many crus for finesse. One of my favorite Champagnes that deserves to be explored: super drinkable right now, but after 3–5 years of aging it becomes epic. Full of citrus notes, pomelo, and white flowers, with a hint of freshly baked sourdough bread.

a favorite producer I have worked with a lot. Very age-worthy and benefits from being laid down for a couple of years. When young, they are driven by nougat, crisp autumn apples, grilled lemon and toasted almonds. One of the pioneers in stating the disgorgement date on the labels! very useful, you can tell it is a house that makes champagne to be enjoyed with food on selected occasions
