Tasting Notes
In the glass, this Champagne shows a pale straw to light golden hue, animated by a fine, persistent bead of bubbles. The nose is subtle yet inviting, opening with aromas of quince and fresh apple, layered with hints of toasted bread, delicate brioche, and a light floral lift. As it evolves in the glass, gentle notes of citrus zest and a touch of almond or hazelnut may emerge. On the palate, Assemblée Extra Brut Bio is finely balanced, with a vivid line of acidity that brings energy and length without feeling sharp. The Chardonnay lends tension, finesse, and citrus‑tinged minerality, while the Pinot Meunier adds supple fruit and a discreet, creamy roundness. The estate harvests by hand to ensure that only healthy, perfectly ripe Chardonnay and Pinot Meunier grapes are selected, preserving both aromatic purity and structural balance. In the cellar, gentle pressing and careful temperature control during fermentation help retain the wine’s delicate aromatics. The base wines are blended from multiple plots and often different years to achieve a consistent house style, then aged on their lees in bottle to build texture and complexity. The Extra Brut dosage is kept very low, allowing the terroir, natural acidity, and subtle autolytic notes to shine through without overt sweetness.
