Tasting Notes
In the glass, La Combe Brûlée 2021 shows a luminous, medium ruby color with youthful brightness at the rim. The nose is immediately expressive, offering a classic Vosne-Romanée profile: wild raspberry, red cherry and pomegranate layered with rose petals, subtle incense, star anise and a hint of freshly crushed herbs and wet stone. Gentle notes of fine oak—think sandalwood and a whisper of vanilla pod—sit in the background, never overwhelming the fruit.
On the palate, the wine is precise and finely etched rather than powerful, reflecting the character of the 2021 vintage. Silky, ultra-fine tannins frame vibrant red fruit, with cranberry, cherry and wild strawberry unfolding into savory nuances of black tea, forest floor and delicate spice. The acidity is lively and mouthwatering, giving the wine notable energy and length. Production
La Combe Brûlée is a cool, breezy site set in a small combe (valley) above the village of Vosne-Romanée, with well-drained limestone and clay-limestone soils that naturally limit yields and enhance aromatic finesse. Domaine Bruno Clavelier farms the vineyard organically (certified "Bio") with strong biodynamic influences, working the soils by hand and favoring deep root systems over high production. Harvesting is done entirely by hand, with strict sorting in the vineyard and at the cellar to retain only perfectly healthy Pinot Noir bunches. Vinification typically involves a proportion of whole clusters, native yeasts and a gentle extraction regime—punch-downs and pump-overs are carefully moderated to preserve finesse. The wine is then aged in French oak barrels (with a restrained percentage of new oak) for around 12–18 months, allowing the terroir character of Vosne-Romanée to shine through with minimal intervention.
Food & Serving
This Vosne-Romanée is an excellent partner for refined, subtly flavored dishes that match its elegance. Think roast duck breast with cherry or redcurrant jus, veal or pork tenderloin with morel mushrooms, truffled poultry, or simply grilled lamb cutlets with rosemary. It also pairs beautifully with dishes featuring wild mushrooms, root vegetables and fine, not overly pungent cheeses such as Comté, Tomme or mild washed-rind styles.
