Crafted in a taut, mineral-driven style, it offers a striking balance between purity of fruit, chalky finesse, and precise, bone-dry structure. This non-vintage cuvée showcases Brice’s commitment to grower-style Champagne, where origin and detail in winemaking take center stage.
Tasting Notes
In the glass, this Blanc de Blancs shows a pale straw color with glints of green and a refined, persistent mousse. The nose opens with notes of lemon zest, green apple, and white flowers, layered over chalk dust, fresh brioche, and a hint of almond.
On the palate, it is tense, linear, and elegant, with bright citrus, crisp pear, and stone fruit wrapped around a core of saline minerality. The Extra Brut dosage (very low in sugar) keeps everything focused and dry, highlighting the wine’s racy acidity and fine, creamy texture. The finish is long, chalky, and mouthwatering, with lingering notes of citrus peel and lightly toasted nuts. Enjoy it now for its energy and vibrancy, or cellar for 3–6 years to allow additional complexity and autolytic (brioche, hazelnut) nuances to emerge.
Production
Sourced exclusively from Premier Cru Chardonnay vineyards in the Champagne region of France, this cuvée draws on chalk- and limestone-rich soils that give the wine its tension and precision. Grapes are harvested by hand at optimal ripeness to preserve natural acidity and ensure careful selection in the vineyard. Fermentation typically occurs in temperature-controlled stainless steel tanks to protect freshness and aromatic purity, with a portion sometimes aged in older barrels to add subtle texture and depth. The wine rests on its lees in bottle for an extended period before disgorgement, helping to develop fine bubbles and complex, biscuity nuances. Finished with an Extra Brut dosage, it delivers a very dry, terroir-driven style.
Food & Serving
This Champagne is an outstanding aperitif and pairs beautifully with delicate seafood such as oysters, scallops, sashimi, and prawns, as well as lightly dressed crab or lobster salads. It also complements goat cheese, fresh cheeses, sushi, tempura, and refined vegetable dishes like asparagus or citrus-dressed salads. Serve well chilled at 8–10°C (46–50°F). A brief 10–15 minutes in the glass or carafe is enough to let it open; extended decanting is not necessary, but pouring into a slightly larger white wine glass will enhance aromatic complexity.
