Les Combes Desroches is sourced from selected parcels in the Saint-Véran appellation in southern Burgundy, where limestone-rich soils with clay and stone outcrops foster Chardonnay with pronounced freshness and minerality. Bret Brothers are known for working closely with growers who farm sustainably, often organically or biodynamically, with careful, largely manual work in the vineyards to ensure optimal ripeness and healthy fruit. In the cellar, their philosophy is low-intervention: gentle pressing, native fermentations where possible, and élevage in a mix of stainless steel and carefully chosen barrels or larger wooden vessels, with limited new oak, are used to preserve purity, texture and the clear identity of the terroir.

This Saint-Véran is a natural match for classic seafood and refined, lighter dishes: think oysters, poached or grilled white fish, scallops, sushi, and simply prepared shellfish. It also pairs beautifully with roast chicken, veal in light cream sauces, vegetable terrines, and soft-rind cheeses such as Brie or Camembert, as well as goat’s cheese from the Loire. Serve at around 10–12°C (50–54°F) to highlight its precision and aromatics.
