Bollinger R.D. 1996 in Jeroboam format is a rare expression of Champagne at its most complete: powerful, complex, and still remarkably fresh. Sourced from a high proportion of Grand and Premier Cru vineyards and released as “Recently Disgorged,” it combines the depth of long cellar ageing with the lift and finesse of a wine just set free.

Tasting Notes
In the glass, it shows a deep golden hue with a fine, persistent mousse, reflecting both maturity and vitality. The nose is layered and expressive, with notes of toasted brioche, roasted hazelnut, dried citrus peel, honey, and subtle spice, framed by the characteristic vinous richness of Bollinger. On the palate, the wine is generous and structured, with the breadth and power that come from Pinot Noir at the core, balanced by Chardonnay’s freshness and precision. Expect a creamy, complex texture, impressive depth, and a long, resonant finish. Thanks to its exceptional structure and recent disgorgement, it has superb ageing potential and can continue to evolve for many years.

Production
Bollinger R.D. 1996 is made from grapes grown on 75% Grand Cru and 25% Premier Cru vineyards, with the blend dominated by 70% Pinot Noir and 30% Chardonnay. The first fermentation takes place in oak barrels, a hallmark of the house, before extended bottle ageing under cork, allowing the wine to develop remarkable complexity and depth. It is then disgorged shortly before release, preserving both maturity and freshness.

Food & Serving
This is a Champagne best paired with refined dishes such as lobster, scallops, turbot, truffle risotto, or roast poultry with a creamy sauce. It also works beautifully with aged hard cheeses or even premium charcuterie. Serve well chilled at around 8–10°C, and decanting is generally not necessary, though a short period in the glass will help the wine open fully.
