Tasting Notes
In the glass, Bolieu Pepin de Vigne Brut shows a pale straw-yellow hue with shimmering golden reflections and a fine, persistent bead of bubbles that forms a delicate mousse. The nose is bright and inviting, with aromas of green apple, pear, white flowers, and citrus zest, layered with subtle brioche, almond, and a hint of chalky minerality. On the palate, it is crisp and well-structured, combining the finesse and tension of Chardonnay with the supple, fruit-driven charm of Pinot Meunier. Bolieu Champagne Pepin de Vigne Brut is sourced from selected vineyards in the Champagne region of France, where cool-climate conditions and chalky, limestone-rich soils give the wines their hallmark tension and minerality. Grapes are harvested by hand to ensure only healthy, perfectly ripe clusters make it to the press, preserving delicacy and aromatic purity. The base wines are vinified separately by grape variety, typically in temperature-controlled stainless-steel tanks to retain freshness, then carefully blended across multiple vintages to achieve a consistent house style. After secondary fermentation in bottle following the traditional méthode champenoise, the wine rests on its lees for an extended period to build texture, fine bubbles, and subtle pastry notes before disgorgement and a balanced Brut dosage.

This Brut Champagne is a versatile partner at the table, pairing beautifully with oysters, shellfish, sushi, smoked salmon, and delicate white fish dishes, as well as goat cheese, soft bloomy-rind cheeses, and light poultry or vegetable-based canapés. Serve well-chilled at around 8–10°C (46–50°F) to highlight its freshness and aromatic detail. A brief 10–15 minutes in the glass or an open bottle before serving is usually sufficient; extended decanting is not necessary, but pouring into proper tulip-shaped Champagne glasses will allow the aromas to unfold gracefully.
