The vineyards sit on poor, well-drained soils—often a mix of clay, limestone, and schist—which naturally limit yields and concentrate flavour in the grapes. Harvest is typically done by hand to ensure careful selection of perfectly ripe bunches. In the cellar, the grapes are gently destemmed and fermented with close temperature control to preserve aromatics and manage the naturally high tannins of Petit Verdot. Maturation in quality oak (often used or lightly toasted barrels) helps polish the structure, integrate the balsamic and smoky notes, and contribute complexity without overshadowing the varietal character.
