Tasting Notes
In the glass, this wine presents a deep, opaque ruby core with violet reflections, hinting at both concentration and youthfulness despite its age. The first impression on the nose is distinctly balsamic, with notes of menthol, herbal cough syrup, and cool eucalyptus. As it opens, layers of green forest undergrowth, cold smoke, and a savoury streak reminiscent of crispy breakfast bacon emerge, all lifted by a subtle whisper of violet florals. On the palate, the wine reveals a darker, richer side: ripe black forest fruits, blackberries and blueberries, dark chocolate, and a touch of rum-soaked dried fruits. Firm, ripe tannins provide a dense yet linear structure, keeping the wine dry, taut, and refreshingly grippy rather than heavy or opulent. The acidity is vibrant, giving energy and length to the finish. With its solid tannic backbone and balanced fruit, this 2016 has excellent aging potential and should continue to evolve gracefully for several more years under proper cellar conditions.

Production
Bodegas F. Schatz farms organically in the rolling hills of Andalusia, where warm, dry days and cool nights allow late-ripening Petit Verdot to achieve full phenolic maturity while retaining freshness. The vineyards sit on poor, well-drained soils—often a mix of clay, limestone, and schist—which naturally limit yields and concentrate flavour in the grapes. Harvest is typically done by hand to ensure careful selection of perfectly ripe bunches. In the cellar, the grapes are gently destemmed and fermented with close temperature control to preserve aromatics and manage the naturally high tannins of Petit Verdot. Maturation in quality oak (often used or lightly toasted barrels) helps polish the structure, integrate the balsamic and smoky notes, and contribute complexity without overshadowing the varietal character.

Food & Serving
This Petit Verdot Bio 2016 is a natural partner for robust, savoury dishes: think grilled or roasted lamb, Iberico pork, game (venison, wild boar), or slow-braised beef cheeks. It also works beautifully with smoky charcuterie, hard aged cheeses, and dishes featuring mushrooms, rosemary, or thyme. Serve at 16–18°C to highlight both the fruit and the herbal, balsamic nuances. Decanting for 45–60 minutes is recommended, especially in its current stage of evolution, to allow the initial menthol and smokiness to unwind and the dark fruit and chocolate notes to fully emerge.
