Harvest is done by hand, allowing careful selection of bunches in the vineyard and again at the winery. Vinification follows traditional Burgundian methods: gentle destemming, a cool pre-fermentation maceration to draw out color and aroma, followed by fermentation in open vats with regular punch-downs or pump-overs to manage extraction. The wine is then aged in French oak barrels, a modest proportion of them new, to polish the tannins and add subtle spice without overshadowing the pure expression of Pinot Noir and Pommard’s distinctive terroir.
