Production
The Dernauer Pfarrwingert is essentially the home vineyard of Julia Bertram and Benedikt Baltes, stretching up the steep hillside directly behind their winery in the village of Dernau. The site is steeply sloped, with a warm, south-facing exposure and soils dominated by heat-retaining slate and greywacke—conditions that promote slow, even ripening of Spätburgunder while preserving its vibrant acidity. Grapes are hand-harvested to ensure only perfectly ripe, healthy fruit reaches the cellar. Fermentation is carried out spontaneously with native yeasts, often in traditional wooden vessels made from local oak, allowing the wine to ferment and mature gently on its own terms. The wine is bottled without filtration, preserving texture, aromatic nuance and a clear sense of place in every glass.
