Positioned as a bridge between the estate’s village wines and its single-vineyard bottlings, it offers an early glimpse into the character of Ott’s top sites. DER OTT has become something of a reference point for modern Grüner Veltliner: pure, focused and shaped by meticulous vineyard work.

Tasting Notes
In the glass, DER OTT Bio 2023 shows a pale straw-yellow hue with green reflections, signaling both youth and freshness. The nose opens with a lightly reductive edge that quickly gives way to crisp green apple—think Granny Smith—alongside hints of young asparagus, fresh-cut herbs and a touch of hay. With air, warmer tones of yellow stone fruit emerge, backed by a subtle, savory note reminiscent of crusty bread and crushed stone. On the palate, the wine is precise and linear, with a fine, stony backbone that reflects its Kamptal-influenced components, while the Wagram sites contribute a gentle, rounded texture. Lively acidity drives flavors of green apple, citrus zest, white pepper and a whisper of fennel, wrapped in a dry, mineral finish that feels both taut and elegant. Enjoyable in its youth for its vibrancy and lift, this 2023 also has the structure to develop more complexity over the next 4–6 years, gaining layers of spice, nuttiness and creamier texture with careful cellaring.

Production
DER OTT Bio is sourced from organically cultivated younger vines in some of Bernhard Ott’s top-rated sites, primarily Spiegel and Rosenberg on the loess-rich Wagram plateau, and Stein in the neighboring Kamptal, known for its poorer, more stony soils. This blend of loess and stone gives the wine both charm and tension. Grapes are typically hand-harvested to ensure precise selection and brought to the cellar in small containers to preserve freshness. In the winery, Ott favors a gentle, minimalist approach: careful pressing, spontaneous or carefully controlled fermentation, and élevage in stainless steel and/or large neutral casks to protect the clarity of Grüner’s fruit and its signature peppery, mineral profile. The result is a wine that transparently reflects its terroir rather than the hand of the winemaker.

Food & Serving
DER OTT Bio 2023 is a versatile food wine that shines with delicately flavored yet aromatic dishes. It pairs beautifully with spring vegetables—white asparagus, peas, artichokes—as well as freshwater fish, sushi, light poultry dishes, and classic Austrian fare such as Wiener Schnitzel or crisp salads with herbs. Its bright acidity and subtle spice also make it an excellent partner for Asian-inspired cuisine, especially lightly spiced Thai or Vietnamese dishes. Serve well-chilled, ideally at 9–11 °C. A brief splash-decant or 15–20 minutes in the glass allows the initial reduction to blow off and the layers of fruit and spice to fully unfold.
