Tasting Notes
Expect a lightly hazy appearance in the glass, a deliberate result of the unfiltered winemaking. The nose is vibrant and inviting, with fresh orchard fruit, ripe citrus, and subtle floral nuances, leading into a palate that is round, supple, and fruit-driven, yet still lively and precise. Despite its natural style, the wine feels silky and balanced, with enough structure to drink beautifully now and the concentration to hold for a short period if kept well.

Production
This wine comes from a relatively new parcel in the Domaine Jaeger-Defaix portfolio, selected specifically for its potential to produce an unsulfured, unfiltered Chardonnay that faithfully expresses its terroir. The vineyard lies in Rully, in Burgundy’s Côte Chalonnaise, where the soils and climate support wines with freshness, texture, and clear regional identity. Harvesting and vinification are handled with care to preserve purity and energy, with no sulfur added and no filtration before bottling.

Food & Serving
This is a versatile white Burgundy that works well with roast chicken, grilled fish, shellfish, creamy pasta dishes, and hard cheeses. Serve it slightly chilled, around 10–12°C, and there is no need to decant unless you want to give the wine a little time in the glass to खुलen up.

Domaine Jaeger-Defaix is led by Hélène Jaeger-Defaix, who took over the estate in 2005 and carries forward a long family legacy in Rully. Her great-grandfather, Henri Nipce, was instrumental in helping Rully achieve AOC status in the 1930s and in building the appellation’s reputation. Today the domaine is recognized for producing wines that respect the region’s heritage while embracing a thoughtful, terroir-driven style.
