Tasting Notes
In the glass, the wine shows a slightly hazy appearance, a deliberate result of being bottled without fining or filtration. The nose is precise and expressive, with cool orchard fruit, citrus, and a strong mineral edge, while the palate is clean, tense, and layered with fresh fruit and Chablis’s classic chalky, saline character. Despite its restrained, terroir-driven profile, the wine has impressive breadth and energy, unfolding gradually in the glass. Its structure and freshness suggest good short- to medium-term aging potential, during which its mineral depth and complexity should continue to develop.

Production
This wine comes from old Chardonnay vines in Chablis, where the cool climate and calcareous soils of Burgundy create the region’s signature mineral style. Bernard Defaix selects grapes from vines over 40 years old and vinifies the wine with a highly natural approach, avoiding clarification, filtration, and sulfur addition to preserve maximum authenticity and texture.

Serve well chilled at 10–12°C for the best expression of its freshness and mineral drive. It pairs beautifully with oysters, shellfish, grilled white fish, sushi, goat’s cheese, and delicate poultry dishes; decanting is not essential, but a brief aeration can help the wine open up if served very young.
